The history of Canestrelli biscuits

The etymology of the name is uncertain. Some derive it from the term canestro, which is a straw or wicker basket in which they were placed to cool and where they were stored. The roots of Canestrelli go back to antiquity. In the Canavese and Susa valleys, they have been prepared since the Middle Ages. Canestrelli shortcrust pastry probably dates back to the 19th century and belongs to the Ligurian tradition.
